This is a classic, traditional Tuscan-style oil, very rich and buttery, with more of the fruit flavors up front; the green vegetable and bitter notes are moderate, as is the spiciness. It's very versatile as a top-quality finishing oil, but do not use it to cook; it's too good for that.
