Right after we opened in 2002, we got a call from a customer who said “that pork I bought reminds me of the pork I ate growing up. It’s worth turning my stove on again!” We care a lot about selecting the best quality meat and seafood that we can get our hands on, not only because it's better for our food system and better for the environment, but also because it tastes really great.
We could rant on about the state of the meat industry in the US: the drugs, the pollution, the inhumane treatment of animals. Marczyk’s feels so strongly that we go through great lengths to carry the best tasting naturally raised meat that we can find. We source from meat suppliers like Niman Ranch, who purchase their beef and pork from a network of small family farms who give their animals room to roam, clean vegetarian feed, and never-ever treat them with antibiotics or hormones. Our chickens are raised locally by Boulder Natural Meats without the use of antibiotics or hormones. Try our Marczyk Roadkill Roosters, a marinated, spatchcocked chicken that is ready-to-cook and perfect for throwing on the grill. We also have duck and goose available frozen and a variety of market-made marinated chicken breasts and chicken sausages. During the holidays, we stock up on both natural and heirloom varieties of turkey.
Seafood in Denver? Absolutely! In fact, Sunset Magazine even suggests Marczyk's for fish. We get fresh seafood deliveries every single day, from all over the world. We source our seafood from vendors like Foley Fish, who has a strong commitment to well managed, sustainable seafood which you can read more about here. Full Service Butcher
If you haven't figured it out by now, we take our meat really seriously. That's why we have a full-time expert butcher named Jimmy who can cut meat like nobody's business. Because our attention to quality doesn't end with our careful sourcing practices - we also want to ensure that every piece of meat we purchase is handled properly and cut perfectly. You buy one turkey a year. Make it the best. Each year, the US produces over 250 million conventional turkeys raised in factory farms. These birds are kept tightly packed in confinement barns, treated with drugs, and grow so fast that the turkeys sometimes can't even support their own weight. Sound appetizing? We don't think so, either, and that's why our goal for each holiday season is to provide a better bird for our customers. We stock up on Willie Birds, which have a big turkey taste and are all natural and truly free-range. These broad-breasted whites are the conventional breed you all know, but raised naturally without the use of any antibiotics or growth hormones. Our Heritage Turkeys are a Marczyk exclusive. These unique Blue Slate turkeys are raised in Bennett, CO and are a rare breed indigenous to the Americas. They taste similar to a wild turkey with lots of rich, dark meat and tons of turkey flavor. Like the Willie Birds, they are raised with absolutely no antibiotics or growth hormones. Christmas Goose! Embden goose fresh from Grimaud, or Colorado Pilgrim heritage goose from farmer Dallas Gilbert. Aged Beef. We age our Niman Ranch beef for a minimum of 30 days and up to 60, and around Thanksgiving and Christmas we are fully stocked on all those fancy aged cuts that you crave during the holidays.
