This is a classic, traditional Tuscan-style oil, very rich and buttery, with more of the fruit flavors up front; the green vegetable and bitter notes are moderate, as is the spiciness. This year's Lucero Olio Novello comes from 70% Picual olives and 30% Coratina olives that were all harvested and milled in November 2018. And then the oil was also bottled in November 2018. This is fresh stuff. This is a robust, green-tasting olive oil with persistent bitterness and pungency. (Reminder: Bitterness is always diminished with the addition of salt.) Olio Novello pairs very well with a variety of food, but it is to be eaten, not cooked with.
