What's the big deal of roasting at 8,000 feet? Things boil at a lower temperature at elevation. Similarly, when Vail Mountain Coffee & Tea roasts these coffees for us,  the lower roasting temperatures allow the sugars and carbohydrates in the coffee beans to caramelize very slowly, producing deep, rich flavor profiles without bitterness, even in the darkest of roasts. Lower roasting temperatures also eliminate the problems of scorched and baked flavors that other roasters frequently experience at lower elevations. So it is with all of our coffees. This is a good thing.
