
Our Artisan Bread for May: Roasted Red Pepper & Sea Salt Focaccia
Focaccia is a flavorful Italian bread with a rich history. We're making roasted red pepper and sea salt focaccia by the sheet pan and selling it by the 1/4 sheet, with red peppers roasted in-house for extra depth.
A signature feature of focaccia is the dimpling — pressing fingertips into the dough before baking. This helps prevent large bubbles, ensures even baking, and creates little wells for herbs and olive oil to pool.
Olive oil is essential: it flavors the dough, keeps it moist, and extends freshness.
Traditional focaccia is often topped with rosemary and salt, but variations abound — including ours. Enjoy it on its own, as sandwich bread, in a bread basket, or repurpose it into croutons or breadcrumbs.
