Baja Seared Flounder:

Baja Seared Flounder:

  • Pat fillets dry and season with salt to taste

  • Dust with a little granulated garlic and granulated onion - about 1/2 tsp each for one fillet

  • Over med high heat in a pan with 2tbs neutral oil, sear the fish on both sides for 3 minutes

For the sauce:

  • 2 jalapenos - seeded and minced

  • 1 avocado

  • Juice of 1 lime

  • 4 tbs chopped cilantro

  • 1/2 cup Greek yogurt or sour cream

  • Salt to taste

  • Puree until smooth

To Serve:

  • Serve seared fillets family style smothered in the avocado sauce

  • Serve with tortillas, MFF pico de gallo and MFF guacamole to make killer Baja tacos
