Baja Seared Flounder:

Baja Seared Flounder:
Pat fillets dry and season with salt to taste
Dust with a little granulated garlic and granulated onion - about 1/2 tsp each for one fillet
Over med high heat in a pan with 2tbs neutral oil, sear the fish on both sides for 3 minutes
For the sauce:
2 jalapenos - seeded and minced
1 avocado
Juice of 1 lime
4 tbs chopped cilantro
1/2 cup Greek yogurt or sour cream
Salt to taste
Puree until smooth
To Serve:
Serve seared fillets family style smothered in the avocado sauce
Serve with tortillas, MFF pico de gallo and MFF guacamole to make killer Baja tacos
