They named their flat corn cakes — at first made with no more than ground corn, water and salt — "hoe cakes" (after the "hoe," a nickname for a cast-iron skillet) and "johnny cakes" (originally "journey cakes" because you could pack your saddlebags with them). They also called them "pone"; they called them "spoon bread." Before and after 1776, each region of the new country seemed to find its own local name for these cakes.

American cornbread cooks also began to add tasty ingredients to the basic recipe — such as eggs and milk, or butter and buttermilk. Out here in the West, we liked sometimes to melt lard to grease the skillet and to add chopped chiles to the cakes because we add chopped chiles to everything.

On the one hand, Marczyk's new cornbread slipstreams into this tradition, using a recipe of cornmeal, wheat flour, baking soda and baking powder, eggs, milk, butter and buttermilk. On the other, it eschews the exclamation points of chiles, cheese or bacon.

"Cornbread evolved from being a filler," says chef Jamey Fader, culinary director at Marczyk's, "to having a sort of personality, not being so plain. While we want ours to have personality, it's also straightforward so that it goes great with all the barbecue" that Marczyk this month also offers alongside it.
