Starting today you can order our raw, market-made corned beef for St. Patrick's Day. We're brining it in our own corning concoction, the recipe for which we converted into a crypto-something-or-other and now we're not sure if it's still present in this realm of existence.

We've been soaking Niman Ranch brisket in our super-secret brine for several weeks. To delve into the science of it all: The brine wraps a little quilt of flavor around each brisket molecule, and then something probably happens with the periodic table and comets and stuff. The point is, our market-made corned beef is exquisitely tender and aromatic and delightfully and boldly delicious. Order extra for sandwiches, corned beef hash, or what-have-ya.

We named our soda bread Elizabeth Kiernan Brown Irish Soda Bread to honor our Culinary Director Chef Jamey Fader's grandmother, from whom the recipe came. It is a dense, hearty, delicious bread made with a few simple ingredients: flour, baking soda, baking powder, sugar, raisins, caraway, and buttermilk. It is a peasant bread, meant to sustain farmers through the final hours of their days.
