As the saying goes, When life gives you lemons, make lemonade. In Colorado, with our 100% lack of citrus trees, life gives us chiles during the summer, which isn't a bad thing at all, and since chile-ade is a nonstarter, we added Pueblo chiles to our artisan bread for August. |

A high percentage of durum flour gives this bread a lovely, golden hue, as well as a nutty flavor. To this we add roasted Pueblo green chiles. Their natural sweetness and inherent heat combine to make a well-balanced bread.
You'll notice the subtle flavors of chiles that pervade each loaf, and you'll also get small chunks of chile that are distributed throughout, providing stronger pockets of flavor as well as subtle heat. This bread would make a world-class grilled cheese sandwich, but it's also spectacular all on its own. (And we just so happen to have a recipe from Bill St. John for that very grilled cheese sandwich.) |
