Royal Red shrimp, or Pleoticus Robustus, for you scientific name aficionados, are a deepwater shrimp species found from the Gulf of Mexico to New England. These are big shrimp, with 10 to 15 of them per pound. Hank Shaw, author of Hook, Line and Supper, describes them as softer than "typical" shrimp and more similar to scallops, blue crab, or lobster, and he still recalls his first experience eating them in Florida, where they were served with lime butter; he remembers them as being heavenly. Because they make their home in deeper waters than do other Alabama shrimp, Royal Reds have a natural saltiness to their taste. |
