This unfiltered oil, biodynamic and certified organic — a fine example of the symbiosis among the olive trees, honeybees and grape vineyards of the famed Marco de Grazie estate — comes from 3,000 feet elevations on the slopes of Sicily’s still-active Mt. Etna. Round, buttery, with hints of banana and herb, yet electrically fresh. From up to 12 indigenous olive cultivars, but mostly Nocellara, Etnea, and Biancolilla.

Paniole
Tuscany, Italy
From close to 4,000 olive trees averaging 90 years of age, growing on the slopes of Mount Amiata in the Brunello di Montalcino district of Tuscany and from a famed Brunello producer, the Ciacci family. Because it is 50 percent from the Olivastra Seggianese olive cultivar, it is uncommonly "fat," rich, and elegant for a Tuscan oil, with tastes on all fours of pure green olives edged in spicy notes. It sports a back-of-the-throat snap only at the end of a taste. So rich, it is like a sauce; treat it as such, a great drizzler. From the olive cultivars Olivastra Seggianese (50%), Moraiolo (30%), and Leccino (20%).

Villa Calcinaia Chianti Classico
Tuscany, Italy
A gorgeous yellow-green color presages aromas and tastes of fresh-cut grass, the herb chervil, and a mix of hazelnut and almond. "Fat" of texture and luscious on the palate, with a mere suggestion of spice and a bite similar to sorrel's, yet only at the finish. From a well-known producer of Chianti Classico and carrying that D.O.P. certification. A perfect dressing oil, for salads or atop grilled fish or fowl. Bonamini Veneto Valpolicella
Veneto, Italy
A rare example of a delicate, yet fruity olive oil from Italy; in fact, Bonamini is considered the "gold standard" for this style of oil in Italy. This oil comes from 6,500 trees planted on terraces and hillsides just northeast of Verona, in the Valpolicella D.O.P. The cooler climate and two native olive varieties produce a fresh, complex, creamy, and bright oil with notes of plantain, ripe apple, and olives. It has a lingering medium "burn" that adds flavor and complexity without too much pepper. From the indigenous olive cultivars Grignan and Favarol.
