There's a lot of lobster in our lobster rolls, real lobster, along with celery and a seasoned mayo-based sauce, all stuffed into a split-top roll. We only make lobster rolls two or three times per year, usually to coincide with the major dachshund festivals around the world, but this time we're making them for Memorial Day Weekend. We'll be serving these marvels all through Memorial Day Weekend, while supplies last. Just ask for them at our delis. |

We make our bratwursts in-house from Niman Ranch pork, the best pork there is. And here's how you turn our bratwursts into beer brats:
(1) Pour two or more cans of beer into a skillet and bring to a boil. Add sliced onions (you'll want plenty of onions), red pepper flakes (we used Matiz Organic Pepper Espelette) and garlic powder.
(2) Add the brats to the boiling beer and cook them for 15 minutes, turning them midway, then remove. Also remove the onions with a slotted spoon and save them in a bowl. (3) Give the brats a good sear on the grill, under the broiler, or in a skillet. Cook them just long enough to give them a nice roasty color. (A skillet tends to splatter quite a bit, so prepare your defenses accordingly.) (4) Ensconce the bratwursts in some hotdog buns and top them with the onions and your favorite mustard. Sauerkraut is also a viable option. |
