We've been making our Peach Whiskey Sausage for several years because what else are you going to do when Colorado produces such great peaches and such great whiskey — plus the combination of peaches and whiskey is a taste sensation worthy of a disco ball.
After we grind Niman Ranch pork, we add Colorado peaches from Ela Family Farms, Leopold Bros. whiskey (distilled in Denver), a few herbs and spices and a touch of maple, then fill casings with this glorious mixture until each sausage is 1/3 pound.
This is a sausage that needs to be front and center with perhaps just mustard, sauerkraut, and a bun as companions. These are ideal football game grillers. You'll taste the whiskey as a subtle constant in the background, chunkettes of peaches providing a soupçon of sweetness, with rosemary and maple rounding everything out.
