Zarandeado Style Snapper

Ingredients:

  • Yellowtail snapper fillets (or a whole fish)

  • 3-4 dried guajillo chilies (stemmed and seeded - then pureed with a little hot water)

  • 1/4 cup mayonnaise

  • 2-3 cloves garlic

  • 2 tbsp soy sauce

  • 2 tbsp Worcestershire sauce

  • 1 tbsp tomato paste

  • Juice and zest of 1 lime

  • 1 tsp hot sauce

Directions:

  • Combine all ingredients and allow to marry for two hours

  • Spread on fillet, or butterflied whole fish and grill

  • Spread on a fresh coat for serving
