Zarandeado Style Snapper

Ingredients:
Yellowtail snapper fillets (or a whole fish)
3-4 dried guajillo chilies (stemmed and seeded - then pureed with a little hot water)
1/4 cup mayonnaise
2-3 cloves garlic
2 tbsp soy sauce
2 tbsp Worcestershire sauce
1 tbsp tomato paste
Juice and zest of 1 lime
1 tsp hot sauce
Directions:
Combine all ingredients and allow to marry for two hours
Spread on fillet, or butterflied whole fish and grill
Spread on a fresh coat for serving
