The Rustic Ciabatta

Our Artisan Bread for May, the Rustic Ciabatta, stands apart from our daily ciabatta in a number of ways. On the technical side, it begins with a poolish, a 100% hydration pre-ferment with a touch of yeast. The poolish comes to life over the period of 12 hours when it is combined with flour, water, more yeast and sea salt to build deep flavor and structure. Once mixed, the dough is gently handled and shaped, resulting in a loaf with higher hydration (80% vs. 72%) and a beautifully light, open crumb.

The result is a ciabatta with a thin, crackly crust and an airy interior.

Beyond the technique, it is simply delicious and pairs especially well with our May Entree: Lemon Chicken Parmesan.
