Fish Tacos

Wahoo makes an incredible taco fish, but because it’s so lean, the key is keeping things quick and simple. Trim the fillets into thinner pieces so they cook evenly over medium-high heat without drying out.

1. Season the fish with salt, pepper, a light rub of oil. I like to add some granulated onion as well.

2. Grill or sear over medium-high heat for just 2–3 minutes per side, until flaky and lightly browned.

3. Remove from the grill or pan and finish and place in a mixing bowl.

4. Season with fresh lime juice.

From there, it’s all about the build: warm tortillas, flaky wahoo, Marczyk Guacamole, Pete’s Pico de Gallo, and a cool dollop of sour cream. Simple, fast, and perfect for an easy taco night.
