Niman Ranch Pulled Pork Salad

Both the history and reach of meat salads — some sort of meat served room temperature with greens and other verdure — is long: Thai beef salad, Laos' lamb larb, the way Italians use leftover lamb or veal over mixed greens, all those Chinese chicken salads; heck, you could argue that the Cobb and chef's salads are our Yankee turns. With the world release (at Marczyk's Fine Foods) of Niman Ranch Pulled Pork with New Belgium's Fat Tire Ale, you can do your own turn: Take a box of Denver's Altius Farm's mildly spicy Brassica Mix (with its red and green frilled mustard greens, Chinese cabbage, tatsoi and pac choi) and top it with strands or spoonfuls of slightly heated-through pulled pork. No buns or tortillas necessary, though they're good options of course, unless you're lowering your carbs.
