First, a few words about ordering:
When you order an item that is “catch weight,” i.e., by the pound, your credit card will be tokenized — sort of precharged, but not charge charged — for the average weight of that item. When we prepare your item and weigh it, we will price it according to its exact weight, and that price will be slightly higher or lower than the tokenized amount due to the variation in weight, and that is the price your card will get charged when you pick up your item.
For example, you order a two-bone prime rib. Your card will get tokenized for $119.96 (4 pounds x $29.99/lb) (each bone is about two pounds). When we prepare and weigh your prime rib, it might weigh 4.1 pounds, so the exact price would be $122.96 (4.1 x $29.99).

As you can see by the illustration, if you'd like a one-bone, two-bone, etc., prime rib, the cuts are made between the bones, so a one-bone prime rib has half of the meat that is on either side of that bone when it's a whole rib section, which equals about two pounds and will feed two comfortably. There is a two-pound minimum order requirement, since a single bone of prime rib weighs about two pounds, and then two-pound increments therafter, up to 18 pounds.
